You say this problem did not appear before engine was rebuilt. How long ago was that? Did you put in fresh coolant? Some of the antifreeze glycols can begin to look like spaghetti when they get too old. My recomm would be to pull the radiator and take it to a good radiator shop for flow test, maybe boil-out... Then try without the thermostat; see if that makes any difference.

My recomm stands. I had exactly this problem with a Dodge B150 van with 360 v8. Radiator needed boiling-out. Suggest you talk with the person who installed the new engine, then (if indicated) get a flow test of your radiator. Also ask if there is any special procedure for filling with coolant... Don't know in your case, but with some engines you need to think about bleeding the system, for example, by pulling a heater core hose. Good luck

could it be a cracked head or a bad head gasket?

do you have oil mixed with the coolant? if you do the coolant will look like creamy chocalate milk and thats dead give away the head or head gasket failed.

Wrenching40plus has a good point about some systems needing to be bled. I had it happen to me where I changed a "RAD" filled it up while running and thought it was good but while driving it started to overheat when it cooled and I took the cap off the coolant was really low.

it might not be the case with yours since it doesnt boilover until you shut it off. I'd go to a radiator shop and have the cap pressure checked

First I would get an accurate temp guage. "N" doesn't really tell ya much as far as actual temperature. Are you positive that its not boiling over while its running too? I think that the cooling system is just barely keeping up. you might wanna check the basics like timing and fuel mixtures.

what year is the truck anyway?
