I have taken the a/c unit off of my mud truck and i was wondering if i take the a/c motor off of the serpentine belt and get a shorter belt will that increase horsepower at all because it has less to turn?

it will not gain power the way you are talking about. if anything, it will probably wear the belt out faster because you have a shorter belt. maybe that only applies to chains.
the only power you will gain is the lack of the compressor engaged. the pulley spins freely and takes relatively nothing away from truck performance. with the compresor working, though, you will see 15 or 20 hp gone, again, only when the clutch is engaged and the compressor is working.
gmctrucks has an underdrive system that creates power like what you are refering to. but length of belt will not affect hp numbers.
